RECIPE : No-Bake Blueberry Cheesecake

Monday, November 2

I made a large Blueberry Cheesecake last week for my little Sanjo's 2nd month-day. Since we don't have an oven here at home, I made one that's no-bake. It's quite easy to make, and will take only a few minutes. It's simple and quite yummy (or at least for my Bubby!) Haha! So here it is:

Ingredients
For the crust:
2 cups graham crackers, crushed
1/3 cup brown sugar
1/2 tub butter, melted (I used Anchor Butter because it's salted, and the flavor is rich)

For the cheese filling:
1 tub cream cheese (I used Magnolia Cream Cheese this time)
1 pack 250g all purpose cream
1 tbsp unflavored, clear gelatin powder
4 tbsp water (you can also use milk instead of water for creaminess)
1/4 cup white sugar

Topping:
1/2 can blueberries in can

Procedure:
Mix the crushed graham crackers, brown sugar and melted butter to form the crust. Once mixed properly, place on the bottom of the pan and press tightly. Put aside. Next, mix the cream cheese with the sugar. Then, dissolve the gelatin powder with the water in a low-heat pan. Then carefully mix it in the cream cheese mixture. Beat the all purpose cream until fluffy. Then fold it in with the cream cheese mixture. Mix well. Then pour the mixture on top of the crust. Chill for about an hour to allow the cream cheese to firm up before pouring the blueberries, or you can go ahead and top it with the blueberries and chill.

Hope you all like it! :) Till the next recipe.
